Ingredients

- 2 cups fresh strawberries
- 1/2 cup granulated sugar
- 1 1/2 cups heavy cream, chilled
- 1 tablespoon unflavored gelatin
- 2 tablespoons cold water
- 8 ounces white chocolate, chopped
- 4 tablespoons unsalted butter, melted
- 1 cup cookie crumbs (graham crackers or digestive biscuits)
Instructions
- Begin by pureeing the fresh strawberries with half of the granulated sugar in a blender until smooth.
- In a small bowl, sprinkle the gelatin over cold water and let it bloom for about 5 minutes.
- Gently heat the bloomed gelatin in the microwave or over low heat until it dissolves completely.
- In a chilled mixing bowl, whip the remaining sugar into the heavy cream until soft peaks form.
- Fold the strawberry puree and melted gelatin gently into the whipped cream.
- Spoon the creamy mousse into your dome molds, filling them about three-quarters full.
- Mix the cookie crumbs with the melted butter and press a layer onto the mousse in each mold.
- Freeze the molds for at least 240 minutes or overnight.
- When ready, melt the white chocolate with a splash of heavy cream until smooth.
- Unmold the mousse domes with care and delicately glaze them with the melted white chocolate.
- Decorate as desired, then chill them one last time before serving.
Notes
These mousse domes can be made up to 72 hours in advance and stored in the freezer. They hold up beautifully and are best served frozen or slightly thawed.
