- 1/2 cup peanut butter
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 2 cups cabbage (green & red), shredded
- 1 cup carrots, grated
- 1/4 cup cilantro, chopped
- 4 pieces flour tortillas
- Optional garnishes: cilantro and chopped peanuts
Instructions
- Marinate the chicken: Mix soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes. Coat the chicken thighs and let stand for 15 minutes.
- Prepare the slaw: Combine shredded cabbage, grated carrots, minced garlic, and chopped cilantro in a large bowl and toss gently.
- Cook the chicken: Heat a skillet over medium-high heat, cook the marinated chicken for 5-7 minutes per side until golden brown and cooked through.
- Make the peanut sauce: Whisk together peanut butter, honey, rice vinegar, and water to thin if necessary.
- Assemble the wraps: Place slaw down the center of a tortilla, add sliced chicken, drizzle with peanut sauce, and garnish if desired.
