- 200g Dark Chocolate (at least 70% cocoa)
- 300ml Heavy Cream
- 3 Large Eggs
- 100g Sugar
- 1 tsp Vanilla Extract
- 200g Fresh Raspberries
- 50g Raspberry Puree
- 1 tsp Gelatin (or agar-agar for vegetarian)
- Mirror Glaze (optional)
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water until smooth, then set aside to cool slightly.
- Prepare the egg mixture by whisking egg yolks, sugar, and vanilla until pale and creamy.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Combine the whipped cream into the melted chocolate until just combined.
- Whip the egg whites in a clean bowl until stiff peaks form and gently fold them into the chocolate mixture.
- Prepare the raspberry filling by mixing the raspberries, raspberry puree, and gelatin (dissolved in warm water).
- Assemble the mousse layers in dome molds, starting with chocolate mousse, followed by raspberry filling, then topping with chocolate mousse.
- Chill the molds in the refrigerator for several hours or overnight until fully set.
- Unmold and optionally glaze the domes with mirror glaze before serving.

Make-ahead tips: Prepare the mousse a day in advance for better flavor blending. Ensure the chocolate is cool before folding into the whipped cream to maintain airy texture.
