  • 12 tbsp marinating liquid from the jar
  • 3 cloves garlic, crushed/minced

  • 1 tsp dried basil
  • 1 cup heavy cream
  • 1/2 lb pasta
  • 1/2 cup reserved pasta water, as needed

Instructions

  1. Start by puréeing the marinated roasted red peppers and garlic in a food processor or blender. Add 1-2 tablespoons of the marinating liquid for a flavor boost. Blend until the mixture is ultra-smooth.
  2. In a small saucepan over medium-low heat, melt the butter, allowing it to gently foam without browning.
  3. Once the butter melts, add your freshly crushed garlic. Sauté just until fragrant, about one minute, taking care not to overcook, or it may turn bitter.
  4. Stir in the puréed peppers along with salt and pepper to taste. Continue to cook for a couple of minutes until slightly thickened, stirring occasionally.
  5. Sprinkle in the dried basil and pour in the heavy cream. Allow the sauce to simmer for about 6-10 minutes, stirring occasionally, until it reaches a luscious consistency.
  6. If serving this sauce with pasta, transfer your cooked and drained al dente noodles directly into the sauce. Let them finish cooking in the sauce for the best flavor integration. Utilize the reserved pasta water as needed to achieve the perfect creamy texture.
