Ingredients

  • 4 Chicken Thighs or Breasts
  • 1/2 cup Peri-Peri Sauce
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Bell Peppers, diced
  • 1 cup Long-Grain Rice
  • 2 cups Chicken Broth
  • 1/2 cup Cream
  • Salt and Pepper, to taste
  • 2 tbsp Olive Oil
  • Fresh Parsley, for garnish

Instructions

  1. Sauté the chopped onion, minced garlic, and diced bell peppers in olive oil over medium heat for about 5 minutes.
  2. Brown the chicken pieces in the pot for 5–7 minutes on each side until golden.
  3. Incorporate the peri-peri sauce, stirring to coat the chicken evenly.
  4. Mix in the long-grain rice and pour in the chicken broth; bring to a boil.
  5. Simmer gently for about 20 minutes until rice is tender and has absorbed the liquid.
  6. Add the cream and stir to enhance the flavor, seasoning with salt and pepper.
  7. Garnish with freshly chopped parsley before serving.
