- 4 Chicken Thighs or Breasts
- 1/2 cup Peri-Peri Sauce
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Bell Peppers, diced
- 1 cup Long-Grain Rice
- 2 cups Chicken Broth
- 1/2 cup Cream
- Salt and Pepper, to taste
- 2 tbsp Olive Oil
- Fresh Parsley, for garnish
Instructions
- Sauté the chopped onion, minced garlic, and diced bell peppers in olive oil over medium heat for about 5 minutes.
- Brown the chicken pieces in the pot for 5–7 minutes on each side until golden.
- Incorporate the peri-peri sauce, stirring to coat the chicken evenly.
- Mix in the long-grain rice and pour in the chicken broth; bring to a boil.
- Simmer gently for about 20 minutes until rice is tender and has absorbed the liquid.
- Add the cream and stir to enhance the flavor, seasoning with salt and pepper.
- Garnish with freshly chopped parsley before serving.
