Ingredients

  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp kosher salt
  • 6 cloves garlic (minced)
  • 1 tbsp sun-dried tomato oil
  • ¼ cup sun-dried tomatoes (roughly chopped)
  • 5 oz baby spinach (fresh)
  • ¼ cup vegetable broth
  • 1 cup heavy cream (or substitute with coconut cream or dairy-free creamer)
  • ¼ cup basil (finely chopped)

Instructions

  1. Prep the Salmon: Pat the salmon dry with a paper towel, ensuring there’s no moisture left. Cut it into 4 equal fillets, and season generously with smoked paprika and kosher salt for added flavor.
  2. Sear the Salmon: Heat a large non-stick pan over medium heat until it’s hot and shimmering. Add the olive oil, then carefully lay the salmon fillets skin-side down. Sear for about 5 minutes until golden brown, then gently flip and cook for another 2 minutes on the flesh side.
  3. Make the Sauce: Once the salmon reaches perfection, remove it from the pan and set it aside on a warm plate. In the same pan, pour in the sun-dried tomato oil and add minced garlic, sautéing for about 1 minute or until fragrant. Toss in the chopped sun-dried tomatoes and pour in the vegetable broth along with the heavy cream. Stir well to combine.
  4. Add Spinach and Simmer: Reduce the heat to low, allowing the sauce to simmer for 2 minutes. Add the fresh spinach, letting it wilt for about 5 minutes to thicken the sauce further.
  5. Combine and Serve: Carefully return the salmon to the pan, nestling it into the creamy sauce. Cook for about another minute, just until the salmon is heated through. Sprinkle it with freshly chopped basil.
  6. Plating: Transfer the salmon fillets to serving plates and serve it atop creamy cauliflower mash, fluffy mashed potatoes, or rice, drenching the fish with the delectable sauce.

Notes

For a dairy-free version, substitute heavy cream with coconut cream. Store leftovers in an airtight container for up to 3 days.
