Description

Deliciously crispy taquitos filled with creamy shredded chicken and spices, perfect for any gathering or cozy dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1012 small corn or flour tortillas
  • Oil for frying or cooking spray for baking

Instructions

  1. Combine the shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, cumin, and a pinch of salt and pepper in a mixing bowl until well mixed.
  2. Preheat the oven to 400°F (200°C) if baking, or heat oil in a skillet over medium-high heat if frying.
  3. Place about two tablespoons of filling in the center of each tortilla and roll tightly, tucking in the sides.
  4. Lay seam-side down on a baking sheet.
  5. For baking, spray with cooking spray and bake for 15-20 minutes until golden. For frying, gently place taquitos in hot oil and fry for 3-4 minutes per side.
  6. Serve hot with salsa, guacamole, or sour cream.

Notes

Make-ahead option: Assemble and freeze unbaked taquitos. Cook from frozen for a quick meal.
