Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the chicken breasts to the skillet and brown for 4-5 minutes on each side.
  3. Pour in the chicken broth and heavy cream, then season with salt and pepper. Stir to combine.
  4. Bring to a simmer, cover, and cook for approximately 20 minutes until the chicken is fully cooked.
  5. Cook the rice in a separate pot according to package instructions.
  6. Serve the creamy chicken over the rice and garnish with parsley.

Notes

You can prepare the creamy chicken a day in advance and reheat with a splash of broth for the best texture.
