- 2 chicken breasts
- 1 cup rice
- 1 cup chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Parsley for garnish
Instructions
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent, about 3-4 minutes.
- Add the chicken breasts to the skillet and brown for 4-5 minutes on each side.
- Pour in the chicken broth and heavy cream, then season with salt and pepper. Stir to combine.
- Bring to a simmer, cover, and cook for approximately 20 minutes until the chicken is fully cooked.
- Cook the rice in a separate pot according to package instructions.
- Serve the creamy chicken over the rice and garnish with parsley.
Notes
You can prepare the creamy chicken a day in advance and reheat with a splash of broth for the best texture.
