Ingredients
Scale
- 1 cup couscous
- 1 1/4 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste

- Prepare the couscous: Stir in the couscous, cover the pan, and immediately remove it from heat. Let it rest for about 5 minutes.
- Fluff it up: After the resting time, fluff the couscous with a fork to separate the grains and allow it to cool.
- Mix the ingredients: In a large mixing bowl, combine cherry tomatoes, diced cucumber, finely chopped red onion, sliced black olives, and crumbled feta cheese.
- Incorporate the couscous: Add the cooled couscous to your vegetable medley.
- Craft the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- Dress the salad: Pour the dressing over the salad mixture and toss gently to ensure everything is coated evenly.
- Garnish and serve: Top with freshly chopped parsley. Serve immediately or let it chill.
