Instructions

  1. Prepare the Aromatics: In your heavy-bottomed pot, heat a splash of oil over medium heat. Add minced ginger and garlic, stirring for about 30 seconds until fragrant.
  2. Add Broth and Coconut Milk: Pour in the chicken or vegetable broth and the can of coconut milk. Stir gently to combine.
  3. Incorporate Seasonings: Stir in the soy sauce and lime juice. Taste the broth and adjust seasoning if needed.
  4. Introduce Potstickers: Gently add the potstickers to the broth and bring it to a simmer. Cook for about 5–7 minutes until heated through.
  5. Finish with Freshness: Just before serving, sprinkle in the chopped cilantro and sliced green onions.
  6. Serve: Ladle the soup into bowls, ensuring each serving contains a few potstickers. Garnish with additional cilantro and green onions.
