Ingredients

  • 2 cups all-purpose flour
  • 2 cups whole milk
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons brown sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Orange, green, and purple food coloring

Instructions

  1. Begin by combining the milk and apple cider vinegar in a bowl or measuring cup. Allow this mixture to sit for 5 minutes to curdle slightly.
  2. In a large mixing bowl, sift together the flour, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt until they’re well combined.
  3. After the milk mixture has rested, pour it into the bowl with the dry ingredients. Add in the vanilla extract and eggs. Stir gently until just combined—take care not to overmix as this could make your pancakes tough!
  4. Next, divide your pancake batter evenly into four bowls.
  5. Set one bowl aside. In the second bowl, mix in green food coloring until the desired shade emerges. In the third bowl, do the same with orange food coloring. Finally, add purple food coloring to the fourth bowl.
  6. Heat a skillet over medium-low heat and spritz with oil or a pat of butter to prevent sticking.
  7. Pour about a quarter cup of one color batter onto the skillet. Allow it to cook until bubbles form and start to pop, about 2–3 minutes.
  8. After flipping, cook for another 30 seconds to a minute until golden brown. Remove from the pan and repeat with the remaining colors until all pancakes are made!
  9. Serve immediately, stacking the pancakes by color for a beautiful presentation!

Notes

These pancakes can be made ahead and refrigerated for up to 24 hours. Consider adding chocolate chips or using alternative cooking methods.
