  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano

Instructions

  1. Cook the orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and let it cool, shaking off any excess water.
  2. Grill the zucchini: Heat your grill or grill pan over medium heat. Toss the sliced zucchini with a drizzle of olive oil and a sprinkle of salt before placing them on the grill. Cook until tender and grill marks appear, usually around 3–4 minutes per side. Remove and let cool.
  3. Combine the vegetables: In a large mixing bowl, toss together grilled zucchini, halved cherry tomatoes, diced cucumber, finely chopped red onion, pitted Kalamata olives, and crumbled feta cheese until evenly mixed.
  4. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust seasoning as desired.
  5. Toss together: Add the cooled orzo to the vegetable mixture, then pour the dressing over the top. Toss gently until everything is coated harmoniously.
  6. Serve: Chill the salad in the refrigerator for at least 30 minutes to let the flavors meld, or serve it straight away at room temperature. Enjoy!
