Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup shredded unsweetened coconut
  • 1 cup panko breadcrumbs
  • Oil for frying
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon lime juice

Instructions

  1. Prepare the oil by heating it in a deep fryer or heavy pot to 350°F (175°C).
  2. Season the shrimp with salt and pepper.
  3. Dredge each shrimp in flour, then dip into the beaten eggs.
  4. Coat each shrimp with the mixture of shredded coconut and panko breadcrumbs.

  6. Combine mayonnaise, sweet chili sauce, and lime juice in a bowl for the dip.
