Description

Deliciously fluffy and lightly spiced cinnamon buttermilk waffles that are perfect for brunch or a cozy breakfast treat.


Ingredients

  • 1 ¾ cup buttermilk or whole milk
  • 2 tbsp lemon juice or white vinegar (as needed)
  • 2 large eggs
  • 1/3 cup oil or melted butter
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 ½ tsp ground cinnamon
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ cup melted butter (for dipping)
  • 1 cup heavy cream (chilled)
  • 1/3 cup confectioner’s sugar
  • ½ tsp vanilla extract

Instructions

  1. Combine the ¼ cup white sugar, ¼ cup brown sugar, 2 teaspoons of ground cinnamon, and 1 teaspoon of ground nutmeg in a small bowl. Mix until well incorporated.
  2. In a medium bowl, mix the 1 ¾ cups buttermilk (or whole milk) with 2 tablespoons of lemon juice or vinegar. Let it sit for about 5 minutes.
  3. Whisk together the 2 large eggs, 1/3 cup of oil or melted butter, and 1 teaspoon of vanilla extract in a large mixing bowl until smooth. Gradually add the buttermilk mixture, mixing gently.
  4. In a separate bowl, whisk together the 2 cups of all-purpose flour, baking soda, baking powder, salt, and 1 ½ teaspoons of ground cinnamon.
  5. Fold the dry ingredients into the wet mixture, stirring just until combined.
  6. Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it if necessary.
  7. Pour the batter into the preheated waffle iron, and cook until golden brown (3-5 minutes).
  8. Remove each waffle, and immediately dip the top side into the sugar coating mixture.
  9. Serve warm, garnished with whipped cream and fresh fruits if desired.

Notes

For a dairy-free version, use a non-dairy milk and dairy-free butter. Leftovers can be stored in the fridge for up to three days or frozen for longer storage.
