Description
Deliciously fluffy and lightly spiced cinnamon buttermilk waffles that are perfect for brunch or a cozy breakfast treat.

- 1 ¾ cup buttermilk or whole milk
- 2 tbsp lemon juice or white vinegar (as needed)
- 2 large eggs
- 1/3 cup oil or melted butter
- 1 tsp vanilla extract
- 2 tbsp sugar
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 1 ½ tsp ground cinnamon
- ¼ cup white sugar
- ¼ cup brown sugar
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- ½ cup melted butter (for dipping)
- 1 cup heavy cream (chilled)
- 1/3 cup confectioner’s sugar
- ½ tsp vanilla extract
Instructions
- Combine the ¼ cup white sugar, ¼ cup brown sugar, 2 teaspoons of ground cinnamon, and 1 teaspoon of ground nutmeg in a small bowl. Mix until well incorporated.
- In a medium bowl, mix the 1 ¾ cups buttermilk (or whole milk) with 2 tablespoons of lemon juice or vinegar. Let it sit for about 5 minutes.
- Whisk together the 2 large eggs, 1/3 cup of oil or melted butter, and 1 teaspoon of vanilla extract in a large mixing bowl until smooth. Gradually add the buttermilk mixture, mixing gently.
- In a separate bowl, whisk together the 2 cups of all-purpose flour, baking soda, baking powder, salt, and 1 ½ teaspoons of ground cinnamon.
- Fold the dry ingredients into the wet mixture, stirring just until combined.
- Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it if necessary.
- Pour the batter into the preheated waffle iron, and cook until golden brown (3-5 minutes).
- Remove each waffle, and immediately dip the top side into the sugar coating mixture.
- Serve warm, garnished with whipped cream and fresh fruits if desired.
Notes
For a dairy-free version, use a non-dairy milk and dairy-free butter. Leftovers can be stored in the fridge for up to three days or frozen for longer storage.
