- 1 cup Flour
- 1 cup Breadcrumbs
- 1/4 cup Capers
- 1/2 cup Lemon Juice and Zest
- 4 tablespoons Butter
- 1/4 cup Olive Oil
- 1/4 cup Fresh Parsley, chopped
Instructions
- Prep the Chicken: Place chicken breasts between two sheets of plastic wrap; pound to an even thickness of about 1 inch.
- Season the Flour: In a shallow dish, combine flour, salt, and pepper; dredge each chicken piece in the seasoned flour.
- Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat; carefully add the chicken and cook for 4-5 minutes on each side until golden brown.
- Make the Sauce: Remove chicken from skillet; in the same skillet, toss in capers and stir for about 30 seconds, then pour in lemon juice.
- Finish Cooking the Chicken: Return chicken to the skillet; allow it to soak in the sauce for 2 minutes; sprinkle with parsley.
- Serve: Plate Chicken Piccata over pasta and garnish with lemon slices.
Notes
For a lighter version, consider using an air fryer or bake the chicken in the oven.
