- 1 tbsp butter
- ½ medium onion (chopped)
- 3 cloves garlic (minced)
- 2 cups broccoli florets (fresh or thawed frozen)
- ½ tsp Italian seasoning
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp Worcestershire sauce
- 2 cups cooked, shredded chicken (e.g., rotisserie)
- 2 cups shredded cheddar cheese (preferably sharp)
- Salt & pepper to taste
Instructions
- Heat the olive oil and butter in a large skillet over medium heat. Add the chopped onion, letting it soften for about 3-4 minutes until it turns translucent.
- Toss in the broccoli florets and let them cook for another 2 minutes.
- Stir in the minced garlic, Italian seasoning, and orzo. Toast for about 30 seconds.
- Add the chicken broth, heavy cream, and Worcestershire sauce; bring to a gentle boil, then reduce to a simmer.
- Allow to simmer uncovered for about 10 minutes, stirring often until the orzo is al dente.
- Fold in the shredded chicken, stirring to warm through.
- Remove from heat and stir in the shredded cheddar cheese until melted.
- Sprinkle with salt and pepper to taste. Let sit for 2-3 minutes before serving.
