- 1 can chickpeas, drained and rinsed
- 1 cup shredded cabbage
- 1/2 cup buffalo sauce
- 8 small corn tortillas
- 1 tablespoon olive oil
- Salt to taste
- Vegan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Mash the chickpeas in a bowl until partially smooth, then stir in the cabbage and buffalo sauce.
- Heat the corn tortillas on a skillet over medium heat for about 30 seconds on each side.
- Spoon the chickpea mixture onto each tortilla and roll tightly, seam-side down.
- Brush the taquitos with olive oil and place them on a baking sheet seam-side down.
- Bake for 15-20 minutes, or until crispy and golden brown.
- Serve hot, optionally topped with vegan cheese.
Notes
Make the filling a day in advance for quick assembly. Optional air fryer method for extra crispiness at 370°F (188°C) for 10 minutes.
