Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup shredded cabbage
  • 1/2 cup buffalo sauce
  • 8 small corn tortillas
  • 1 tablespoon olive oil
  • Salt to taste
  • Vegan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mash the chickpeas in a bowl until partially smooth, then stir in the cabbage and buffalo sauce.
  3. Heat the corn tortillas on a skillet over medium heat for about 30 seconds on each side.
  4. Spoon the chickpea mixture onto each tortilla and roll tightly, seam-side down.
  5. Brush the taquitos with olive oil and place them on a baking sheet seam-side down.
  6. Bake for 15-20 minutes, or until crispy and golden brown.
  7. Serve hot, optionally topped with vegan cheese.
