A decadent cheesecake combining rich chocolate, creamy cheesecake, and tart cherries, topped with a luscious ganache.

- 2 cups chocolate graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- 1 cup heavy cream
- 8 oz chocolate, chopped (for ganache)
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- Combine chocolate graham cracker crumbs and melted butter until crumbly. Press into the bottom of the pan.
- Beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Mix in sour cream and vanilla extract until thoroughly combined.
- Pour half of the cheesecake batter over the crust. Dollop cherry pie filling on top, followed by the remaining batter.
- Bake for 55-60 minutes until the center is just set.
- Cool in the oven with the door cracked for about 1 hour, then refrigerate overnight.
- Heat 1/2 cup heavy cream until simmering, pour over chopped chocolate, and stir until smooth for the ganache.
- Pour ganache over chilled cheesecake, spreading evenly.
- Decorate with additional cherry pie filling if desired.
- Slice and serve chilled.
Notes
Ensure cream cheese is at room temperature for easier mixing. Line the springform pan with parchment paper for easier cleanup.
