Description

A comforting and wholesome zucchini lasagna layered with ricotta, marinara, and melted cheese, perfect for family gatherings or weeknight dinners.


Ingredients

Scale
  • 3 medium zucchinis
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 egg
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
  3. Lay the zucchini strips on paper towels and sprinkle them with salt. Let them sit for about 30 minutes.
  4. Mix together ricotta cheese, egg, oregano, garlic powder, salt, and pepper until well combined.
  5. Spread a thin layer of marinara sauce in your baking dish.
  6. Layer zucchini strips over the sauce, then spread some of the ricotta mixture, followed by a drizzle of marinara sauce, and a sprinkle of mozzarella. Repeat until all ingredients are used.
  7. Cover the dish tightly with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

You can assemble the lasagna ahead of time and refrigerate it before baking. It also freezes well for up to 3 months.
