Description
A comforting and wholesome zucchini lasagna layered with ricotta, marinara, and melted cheese, perfect for family gatherings or weeknight dinners.
Ingredients

- 3 medium zucchinis
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 egg
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
- Lay the zucchini strips on paper towels and sprinkle them with salt. Let them sit for about 30 minutes.
- Mix together ricotta cheese, egg, oregano, garlic powder, salt, and pepper until well combined.
- Spread a thin layer of marinara sauce in your baking dish.
- Layer zucchini strips over the sauce, then spread some of the ricotta mixture, followed by a drizzle of marinara sauce, and a sprinkle of mozzarella. Repeat until all ingredients are used.
- Cover the dish tightly with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
You can assemble the lasagna ahead of time and refrigerate it before baking. It also freezes well for up to 3 months.
