A delightful and moist Berry Tres Leches Cake soaked in a rich milk mixture, topped with fresh berries and a fluffy mascarpone whipped cream frosting.

- 6 large eggs
- 1 cup white granulated sugar
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1 tsp baking powder
- 16 oz mascarpone cheese (softened at room temperature)
- 2 tsp vanilla extract
- 2 tbsp sweetened condensed milk (optional)
- 1 cup confectioner’s sugar
- 2 cups heavy cream (chilled)
- 1 cup sweetened condensed milk
- ½ cup evaporated milk
- ½ cup whole milk
- 6 cups berries (strawberries, blueberries, raspberries)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the eggs and sugar until light and fluffy.
- Add the vanilla to the egg mixture.
- Combine the flour and baking powder in a separate bowl, then gradually add to the egg mixture, folding carefully.
- Bake the batter in a prepared pan for 25-30 minutes or until a toothpick comes out clean.
- Beat the mascarpone cheese and heavy cream until fluffy.
- Add confectioner’s sugar and vanilla extract to the whipped mixture.
- Mix the sweetened condensed milk, evaporated milk, and whole milk in a bowl.
- Soak the cooled cake with the milk mixture.
- Frost with the mascarpone whipped cream and decorate with berries.
- Chill for at least 2 hours before serving.
Notes
For best results, chill your heavy cream before whipping. Allow the cake to cool completely before soaking to prevent crumbling.
