- 1 package (14.1 oz) frozen puff pastry sheets
- 1 beaten egg (for egg wash)
- Everything bagel seasoning (optional)
- 1 tbsp olive oil
- 1 finely chopped shallot
- 2 minced garlic cloves
- 10 oz fresh spinach
- 4 oz softened cream cheese
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan
- 1/4 tsp nutmeg
- 4 large eggs
- Salt and freshly ground black pepper to taste
- Chopped fresh chives (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and grease four 4-inch ramekins.
- Thaw the puff pastry according to package instructions, then roll it out and cut into circles.
- Blind bake the pastry in ramekins for 12-15 minutes until lightly golden; remove weights and bake for an additional 3-5 minutes.
- Sauté shallot and garlic in olive oil until fragrant; add spinach and cook until wilted.
- Stir in cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper until blended.
- Divide the spinach mixture into pastry shells.
- Crack an egg into each shell and season with salt and pepper.
- Brush pastry edges with beaten egg and sprinkle with Everything bagel seasoning.
- Bake for 12-18 minutes until egg whites set and yolks are softly runny.
- Garnish with chives and serve warm.

Make-ahead: Prepare spinach filling a day in advance and refrigerate. Customize with other veggies like mushrooms or peppers.
