Description

A delightful dish featuring flaky puff pastry filled with creamy spinach and baked eggs, perfect for brunch or dinner.


Ingredients

  • 1 package (14.1 oz) frozen puff pastry sheets
  • 1 beaten egg (for egg wash)
  • Everything bagel seasoning (optional)
  • 1 tbsp olive oil
  • 1 finely chopped shallot
  • 2 minced garlic cloves
  • 10 oz fresh spinach
  • 4 oz softened cream cheese
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan
  • 1/4 tsp nutmeg
  • 4 large eggs
  • Salt and freshly ground black pepper to taste
  • Chopped fresh chives (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease four 4-inch ramekins.
  2. Thaw the puff pastry according to package instructions, then roll it out and cut into circles.
  3. Blind bake the pastry in ramekins for 12-15 minutes until lightly golden; remove weights and bake for an additional 3-5 minutes.
  4. Sauté shallot and garlic in olive oil until fragrant; add spinach and cook until wilted.
  5. Stir in cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper until blended.
  6. Divide the spinach mixture into pastry shells.
  7. Crack an egg into each shell and season with salt and pepper.
  8. Brush pastry edges with beaten egg and sprinkle with Everything bagel seasoning.
  9. Bake for 12-18 minutes until egg whites set and yolks are softly runny.
  10. Garnish with chives and serve warm.

Notes

Make-ahead: Prepare spinach filling a day in advance and refrigerate. Customize with other veggies like mushrooms or peppers.
