Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 12 small corn tortillas
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Add your ground beef, diced onion, and bell pepper to a skillet over medium heat. Cook until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain excess fat.
  3. Stir in the garlic powder, cumin, and seasoning, allowing them to infuse the meat for 1-2 minutes.
  4. Remove from heat and mix in your shredded cheese until melted.
  5. Warm tortillas in the microwave for about 30 seconds.
  6. Take a spoonful of the beef mixture and place it in the center of a tortilla. Roll tightly and place seam-side down on a baking sheet.
  7. Lightly spray the taquitos with cooking spray.
  8. Bake for 15-20 minutes or until crispy and golden, flipping halfway through.
