- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- 12 small corn tortillas
- Cooking spray
Instructions
- Preheat your oven to 425°F (220°C).
- Add your ground beef, diced onion, and bell pepper to a skillet over medium heat. Cook until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain excess fat.
- Stir in the garlic powder, cumin, and seasoning, allowing them to infuse the meat for 1-2 minutes.
- Remove from heat and mix in your shredded cheese until melted.
- Warm tortillas in the microwave for about 30 seconds.
- Take a spoonful of the beef mixture and place it in the center of a tortilla. Roll tightly and place seam-side down on a baking sheet.
- Lightly spray the taquitos with cooking spray.
- Bake for 15-20 minutes or until crispy and golden, flipping halfway through.
