  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. In a separate bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  8. Pour half of the cake batter into each prepared pan, then spoon the cheesecake mixture on top of one layer and cover with the remaining batter.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
