Instructions
- In a large bowl, combine the cubed watermelon and arugula.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the watermelon and arugula mixture.
- Add the toasted pine nuts and feta cheese, if using.
- Toss gently to combine all ingredients.
