Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine chopped dates and boiling water. Stir in baking soda and let it sit for 10 minutes.
- In another bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- Gradually add the flour mixture to the butter mixture, alternating with the date mixture, and mix until just combined.
- Pour the batter into a greased baking dish and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- While the cake is baking, heat the heavy cream and caramel sauce in a saucepan until warm.
- Once the cake is done, serve warm with the caramel sauce drizzled on top.
