Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach or kale
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic, zucchini, and bell pepper; cook for another 5 minutes.
- Add diced tomatoes, vegetable broth, thyme, and basil; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Season with salt and pepper, then stir in spinach or kale until wilted.
- Serve hot and enjoy!
