Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy.
- Mix in ube puree, milk, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until well combined.
- Spread the batter evenly on the prepared baking sheet.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Once baked, let it cool slightly, then roll it up with the parchment paper and let it cool completely.
- Unroll the cake, spread whipped cream on top, and roll it back up.
- Chill in the refrigerator for at least 1 hour before slicing and serving.
Notes
- Make sure to use ube puree for the best flavor.
- For a richer taste, you can add a bit of coconut cream to the filling.
- Store leftovers in an airtight container in the refrigerator.
