Description

  • 1 packet (2 1/4 tsp) active dry yeast

  • 1/4 cup unsalted butter
  • 2 large eggs
  • 1 cup currants or raisins
  • 1/4 cup mixed peel (optional)
  • 1/4 cup water
  • 1/2 cup icing sugar (for glaze)

Instructions

  1. In a large bowl, combine flour, sugar, yeast, salt, cinnamon, and nutmeg.
  2. In a saucepan, heat milk and butter until warm, then add to the dry ingredients.
  3. Add eggs and mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes.
  5. Incorporate currants or raisins and mixed peel into the dough.
  6. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  7. Punch down the dough and divide it into 12 equal pieces, shaping them into buns.
  8. Place the buns on a baking sheet, cover, and let rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Make a cross on each bun with a knife or a paste of flour and water.
  11. Bake for 20-25 minutes until golden brown.
  12. Mix icing sugar with water to create a glaze and brush over the warm buns.

Notes

  • For a richer flavor, you can add a bit of orange zest to the dough.
  • These buns are best served warm on the day they are made.
