- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup ice water
- 4–5 medium tomatoes, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix flour and salt, then cut in butter until the mixture resembles coarse crumbs.
- Add ice water gradually until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the dough on a floured surface into a circle about 12 inches in diameter.
- Transfer the dough to a baking sheet lined with parchment paper.
- Spread ricotta cheese over the dough, leaving a 2-inch border.
- Layer sliced tomatoes on top of the ricotta, then sprinkle with mozzarella cheese and basil.
- Fold the edges of the dough over the filling, pleating it to create a rustic look.
- Brush the crust with beaten egg and season with salt and pepper.
- Bake for 30-35 minutes or until the crust is golden brown and the tomatoes are tender.
- Let cool slightly before slicing and serving.
