Ingredients

  • 2 cups fresh Thai basil leaves
  • 1 medium bell pepper, thinly sliced
  • 1 tablespoon soy sauce
  • 1 package rice paper wrappers

Instructions

  1. Brown the beef in a large skillet over medium heat, stirring frequently until it is nicely browned (about 5 minutes).
  2. Add the soy sauce and sliced bell peppers, cooking for an additional 2-3 minutes to soften the peppers.
  3. Remove from heat and fold in the fresh Thai basil, allowing it to wilt slightly.
  4. Soak a rice paper wrapper in warm water for about 10-15 seconds until pliable.
  5. Assemble by laying the softened wrapper on a clean surface and spooning a small amount of the beef mixture onto the lower third.
  6. Roll the wrapper tightly from bottom to top, folding in the sides as you go.
  7. Cook the rolls in the skillet with a little oil, seam-side down, until golden brown (about 2-3 minutes per side).
  8. Serve warm and enjoy!

Notes

For a lighter option, substitute ground turkey or chicken. You can also add shredded carrots or cucumber for extra crunch.
