- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 bag tater tots (about 32 oz)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, brown the ground beef over medium heat until fully cooked.
- Add the taco seasoning, black beans, corn, and salsa to the skillet, stirring to combine.
- In a greased baking dish, spread the beef mixture evenly on the bottom.
- Top the beef mixture with half of the shredded cheese.
- Arrange the tater tots on top of the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown.
- Remove from the oven and sprinkle the remaining cheese on top, then return to the oven for an additional 5 minutes to melt the cheese.
- Let cool for a few minutes before serving.
