Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag tater tots (about 32 oz)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet, stirring to combine.
  4. In a greased baking dish, spread the beef mixture evenly on the bottom.
  5. Top the beef mixture with half of the shredded cheese.
  6. Arrange the tater tots on top of the cheese layer.
  7. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown.
  8. Remove from the oven and sprinkle the remaining cheese on top, then return to the oven for an additional 5 minutes to melt the cheese.
  9. Let cool for a few minutes before serving.
