Ingredients

  • 1 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 tablespoon olive oil
  • 3/4 cup warm water
  • 1 head of roasted garlic
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon fresh herbs (parsley, rosemary, thyme)
  • Butter (for brushing)

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a mixing bowl. Let sit for 5-10 minutes until foamy.
  2. Add flour, salt, and olive oil to the yeast mixture and mix until a dough forms. Knead for 5-7 minutes until smooth and elastic.
  3. Cover the bowl with a towel and let the dough rise in a warm place for 1 hour or until doubled in size.
  4. Mix roasted garlic, mozzarella cheese, and fresh herbs in a separate bowl for the filling.
  5. Roll the dough out onto a floured surface into a rectangle, spread the filling, and roll tightly from one end to the other.
  6. Slice the rolled dough into pinwheels and place them in a greased baking dish.
  7. Cover the dish and let the pinwheels rise for another 30 minutes.
  8. Preheat your oven to 375°F (190°C).
  9. Bake for 25-30 minutes until golden brown.
  10. Brush with melted butter before serving.

Notes

For a make-ahead option, prepare the dough the day before and refrigerate; bake the next day. You can also use an air fryer for a quicker method.
