Description
A delicious and healthy Sweet Potato and Kale Gratin that combines the sweetness of sweet potatoes with the earthiness of kale, baked to perfection.
Ingredients
Scale
- 2 large sweet potatoes, peeled and thinly sliced
- 4 cups kale, chopped
- 1 cup heavy cream
- 1 cup grated cheese (such as Gruyère or cheddar)
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped kale to the skillet and cook until wilted, about 5 minutes.
- In a greased baking dish, layer half of the sweet potato slices at the bottom.
- Spread half of the sautéed kale over the sweet potatoes.
- Pour half of the heavy cream over the layers and sprinkle with half of the cheese.
- Repeat the layers with the remaining sweet potatoes, kale, cream, and cheese.
- Season the top layer with salt, pepper, and nutmeg.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
Notes
- For a vegan version, substitute heavy cream with coconut milk and cheese with a dairy-free alternative.
- Feel free to add other vegetables like onions or bell peppers for extra flavor.
- This dish can be prepared ahead of time and baked just before serving.
