Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and diced sweet potatoes. Cook for about 10 minutes, stirring occasionally.
  3. Add the diced apple, cinnamon, salt, and pepper to the skillet. Stir well to combine.
  4. Cook for an additional 5-7 minutes until the sweet potatoes are tender and the apples are soft.
  5. Return the crispy bacon to the skillet and mix well.
  6. Garnish with fresh parsley before serving.

  • For a vegetarian version, omit the bacon and use smoked paprika for flavor.
