- 2 medium sweet potatoes, peeled and diced
- 1 large apple, cored and diced
- 4 slices of bacon, chopped
- 1 tablespoon olive oil
- 1 teaspoon cinnamon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside.
- In the same skillet, add olive oil and diced sweet potatoes. Cook for about 10 minutes, stirring occasionally.
- Add the diced apple, cinnamon, salt, and pepper to the skillet. Stir well to combine.
- Cook for an additional 5-7 minutes until the sweet potatoes are tender and the apples are soft.
- Return the crispy bacon to the skillet and mix well.
- Garnish with fresh parsley before serving.
Notes
- For a vegetarian version, omit the bacon and use smoked paprika for flavor.
- Feel free to add nuts for extra crunch.
