- 1 cup strawberries, sliced
- 1/2 cup sugar
- 1 package cream cheese (8 oz), softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 package of sponge cake or ladyfingers
- Fresh mint leaves for garnish (optional)
Instructions
- In a bowl, mix sliced strawberries with sugar and let them sit for about 30 minutes to release their juices.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Lay out the sponge cake or ladyfingers and spread a layer of the cheesecake mixture over them.
- Add a layer of the macerated strawberries on top of the cheesecake mixture.
- Carefully roll the cake or ladyfingers into a log shape.
- Chill in the refrigerator for at least 2 hours before slicing.
- Slice into rolls and serve garnished with fresh mint leaves if desired.
Notes
- For a gluten-free version, use gluten-free sponge cake or ladyfingers.
- Make sure the cream cheese is at room temperature for easier mixing.
- These rolls can be made a day in advance and stored in the refrigerator.
