Ingredients

  • 1 cup strawberries, sliced
  • 1/2 cup sugar
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup powdered sugar

  • 1 cup heavy whipping cream
  • 1 package of sponge cake or ladyfingers
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a bowl, mix sliced strawberries with sugar and let them sit for about 30 minutes to release their juices.
  2. In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Lay out the sponge cake or ladyfingers and spread a layer of the cheesecake mixture over them.
  5. Add a layer of the macerated strawberries on top of the cheesecake mixture.
  6. Carefully roll the cake or ladyfingers into a log shape.
  7. Chill in the refrigerator for at least 2 hours before slicing.
  8. Slice into rolls and serve garnished with fresh mint leaves if desired.
