Delicious crumb bars featuring a sweet and tangy filling of strawberries and rhubarb, topped with a buttery oat mixture.

- 2 cups chopped strawberries
- 2 cups chopped rhubarb
- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 2 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, cold and cubed
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13 baking pan by lining it with parchment paper.
- In a large mixing bowl, combine the chopped strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice. Stir gently and set aside.
- In a separate bowl, stir together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Press two-thirds of the crumb mixture into the bottom of the prepared baking pan.
- Spread the fruit mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the fruit filling. Bake for 40-45 minutes until golden brown.
- Allow to cool completely in the pan before slicing into squares.
Notes
For make-ahead options, prepare the crumb mixture a day in advance. Ensure the butter is cold for a flaky texture.
