Description

Delicious crumb bars featuring a sweet and tangy filling of strawberries and rhubarb, topped with a buttery oat mixture.


Ingredients

  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 baking pan by lining it with parchment paper.
  2. In a large mixing bowl, combine the chopped strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice. Stir gently and set aside.
  3. In a separate bowl, stir together the flour, oats, brown sugar, cinnamon, baking powder, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Press two-thirds of the crumb mixture into the bottom of the prepared baking pan.
  5. Spread the fruit mixture evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the fruit filling. Bake for 40-45 minutes until golden brown.
  7. Allow to cool completely in the pan before slicing into squares.

Notes

For make-ahead options, prepare the crumb mixture a day in advance. Ensure the butter is cold for a flaky texture.
