Ingredients

  • 1 cup diced cherries

  • 1/4 cup crumbled feta cheese

  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil.
  2. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. Fluff couscous with a fork and let it cool.
  4. In a large bowl, combine the diced peaches, plums, cherries, and mint.
  5. Add the cooled couscous to the fruit mixture.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Top with crumbled feta cheese before serving.
