Ingredients

- 1 cup couscous
- 1 1/4 cups water
- 1 cup diced peaches
- 1 cup diced plums
- 1 cup diced cherries
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring water to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and let it cool.
- In a large bowl, combine the diced peaches, plums, cherries, and mint.
- Add the cooled couscous to the fruit mixture.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Top with crumbled feta cheese before serving.
Notes
- Feel free to substitute any stone fruits you have on hand.
- This salad can be made a few hours in advance; just add the feta just before serving.
- For a vegan version, omit the feta cheese.
