Ingredients

  • 1 lb chicken breast or thighs, thinly sliced
  • 12 tsp soy sauce
  • 1 tsp honey
  • 1 clove garlic, minced
  • 8 oz noodles (egg noodles, udon, or rice noodles)
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • Other vegetables as desired (snap peas, mushrooms, or baby corn)
  • 3 tbsp soy sauce
  • 12 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch or arrowroot
  • 23 cloves garlic, minced
  • ¼ cup water or chicken broth
  • Sesame seeds, for garnish
  • Chopped scallions, for garnish
  • Chili flakes, for garnish

Instructions

  1. Prep Ingredients: Slice chicken and vegetables. Cook noodles according to package instructions, drain, and set aside.
  2. Marinate Chicken: Combine sliced chicken with soy sauce, honey, and minced garlic. Marinate for 15-30 minutes.
  3. Make Sauce: Whisk together soy sauce, honey or maple syrup, rice vinegar, sesame oil, minced garlic, cornstarch, and water or broth until smooth.
  4. Cook Chicken: Heat oil in a wok or skillet over medium-high heat. Sear marinated chicken until golden brown (4-5 minutes). Remove from pan.
  5. Stir-Fry Vegetables: Sauté bell pepper, broccoli, and carrots until crisp-tender (2-3 minutes).
  6. Combine Noodles & Sauce: Return chicken to skillet, add noodles, and gradually pour in sauce, tossing to coat. Cook for 1-2 minutes until sauce thickens.
  7. Serve: Plate the mixture and garnish with sesame seeds, scallions, and chili flakes. Serve immediately.

Notes

For a vegetarian option, substitute chicken with tofu. Feel free to customize the vegetables based on your preferences.
