Ingredients

  • 1 lb marinated steak (sirloin, flank, or ribeye)
  • 2 medium sweet potatoes, cubed
  • 1 cup fluffy rice (white or brown)
  • 1 ripe avocado, sliced
  • 1/2 cup cilantro
  • 1/4 cup Greek yogurt or sour cream
  • 1 lime, juiced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prep sweet potatoes by tossing them in olive oil, salt, and pepper, then spread them on a baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes until tender and golden, flipping halfway through.
  4. Cook the rice according to package instructions.
  5. Sear the marinated steak in a skillet over medium-high heat for 4-5 minutes per side, then let it rest and slice thinly.
  6. Prepare the sauce by mixing Greek yogurt, chopped cilantro, lime juice, and salt in a small bowl.
