Ingredients

  • 2 cups cooked chicken, diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced cooked chicken, black beans, corn, red bell pepper, diced avocado, red onion, cherry tomatoes, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, and a generous pinch of salt and pepper until well combined.
  3. Pour the dressing over the salad, and gently toss until everything is well-coated.
  4. Serve immediately or chill in the fridge for at least 30 minutes before serving.

Notes

For the freshest experience, add avocado right before serving to prevent browning.
