- 2 cups cooked chicken, diced
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cooked chicken, black beans, corn, red bell pepper, diced avocado, red onion, cherry tomatoes, and chopped cilantro.
- In a small bowl, whisk together the lime juice, olive oil, cumin, and a generous pinch of salt and pepper until well combined.
- Pour the dressing over the salad, and gently toss until everything is well-coated.
- Serve immediately or chill in the fridge for at least 30 minutes before serving.
Notes
For the freshest experience, add avocado right before serving to prevent browning.
