Ingredients

  • 1 cup corn, canned or frozen
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the Ingredients: In a large bowl, add shredded chicken, black beans, corn, diced bell pepper, halved cherry tomatoes, diced red onion, avocado, and chopped cilantro.
  2. Add Lime Juice and Season: Drizzle lime juice over the salad and sprinkle with salt and pepper.
  3. Toss Gently: Toss everything gently to keep the avocado intact.
  4. Serve or Chill: Enjoy immediately or chill in the fridge for 10-15 minutes.
