Smoky Bourbon BBQ Meatloaf Cupcakes are a creative twist on traditional meatloaf, combining rich flavors of bourbon and BBQ sauce in a fun cupcake form.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1/4 cup BBQ sauce
  • 1/4 cup bourbon
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, BBQ sauce, bourbon, egg, garlic powder, smoked paprika, salt, and pepper.
  3. Mix until well combined.
  4. Line a muffin tin with cupcake liners or spray with cooking spray.
  5. Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
  6. If using, sprinkle shredded cheese on top of each meatloaf cupcake.
  7. Bake for 25-30 minutes or until cooked through.
  8. Let cool slightly before serving.

Notes

  • For a spicier kick, add some chopped jalapeños to the meat mixture.
