Smoky Bourbon BBQ Meatloaf Cupcakes are a creative twist on traditional meatloaf, combining rich flavors of bourbon and BBQ sauce in a fun cupcake form.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1/4 cup BBQ sauce
- 1/4 cup bourbon
- 1 egg
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, BBQ sauce, bourbon, egg, garlic powder, smoked paprika, salt, and pepper.
- Mix until well combined.
- Line a muffin tin with cupcake liners or spray with cooking spray.
- Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
- If using, sprinkle shredded cheese on top of each meatloaf cupcake.
- Bake for 25-30 minutes or until cooked through.
- Let cool slightly before serving.
Notes
- For a spicier kick, add some chopped jalapeños to the meat mixture.
- These can be made ahead of time and reheated for a quick meal.
- Serve with additional BBQ sauce on the side for dipping.
