  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. In a large skillet, sear the roast on all sides until browned.
  4. Transfer the roast to a roasting pan.
  5. In the same skillet, sauté the onion and garlic until softened.
  6. Add cranberry juice, balsamic vinegar, beef broth, brown sugar, and thyme to the skillet; stir to combine.
  7. Pour the mixture over the roast in the roasting pan.
  8. Cover the pan with foil and braise in the oven for 3-4 hours, or until the meat is tender.
  9. Remove the roast from the oven and let it rest before slicing.
  10. Serve with the glaze drizzled over the top.
