- 1 lb shrimp, peeled and deveined
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 2 cups mixed greens
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine lime juice, olive oil, salt, and pepper to create a marinade.
- Add the shrimp to the marinade and let it sit for 15 minutes.
- Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
- In a large bowl, combine mixed greens, diced avocado, diced mango, red onion, and cilantro.
- Add the cooked shrimp on top of the salad mixture.
- Toss gently to combine and serve immediately.
