- 1 whole turkey breast (about 2–3 pounds)
- 1 cup spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup walnuts, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the turkey breast and pound it to an even thickness.
- In a bowl, mix together spinach, cream cheese, feta cheese, sun-dried tomatoes, walnuts, garlic, oregano, salt, and pepper.
- Spread the mixture evenly over the turkey breast.
- Roll the turkey breast tightly and secure it with kitchen twine.
- Place the roulade in a baking dish and drizzle with olive oil.
- Bake for 45-60 minutes or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing.
