Ingredients

- 2 acorn squashes
- 2 tablespoons olive oil
- 1/4 cup maple syrup
- 1/2 cup walnuts, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- Brush the insides with olive oil and season with salt and pepper.
- Place the squashes cut side down on a baking sheet and roast for 25-30 minutes.
- In a small saucepan, heat the maple syrup over low heat.
- Once the squashes are tender, remove them from the oven and flip them over.
- Drizzle the warm maple syrup over the squashes and sprinkle with chopped walnuts.
- Return to the oven for an additional 5-10 minutes.
- Serve warm and enjoy!
Notes
- For added flavor, you can sprinkle cinnamon or nutmeg on the squashes before roasting.
- Make sure to watch the walnuts to prevent them from burning.
