Ingredients

  • 2 acorn squashes
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1/2 cup walnuts, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Brush the insides with olive oil and season with salt and pepper.
  4. Place the squashes cut side down on a baking sheet and roast for 25-30 minutes.
  5. In a small saucepan, heat the maple syrup over low heat.
  6. Once the squashes are tender, remove them from the oven and flip them over.
  7. Drizzle the warm maple syrup over the squashes and sprinkle with chopped walnuts.
  8. Return to the oven for an additional 5-10 minutes.
  9. Serve warm and enjoy!
