Description

Decadent Red Velvet Brookies combine chewy brownies and gooey chocolate chip cookies, delivering a rich treat that’s visually stunning and perfect for any occasion.

Ingredients

Scale
  • 0.5 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 0.25 cup cocoa powder (unsweetened)
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring (gel preferred)
  • 1 tsp white vinegar
  • 2 large eggs
  • 0.75 cup all-purpose flour
  • 0.25 tsp salt
  • 0.5 cup unsalted butter (softened)
  • 0.5 cup brown sugar (packed)
  • 0.25 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 tsp flaky sea salt (Maldon style)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper and spray it with non-stick spray.
  2. In a medium mixing bowl, whisk together the melted butter and granulated sugar until combined. Add the cocoa powder, vanilla extract, red food coloring, and white vinegar. Whisk in the eggs one at a time until smooth. Fold in the flour and salt gently until just combined. Set the brownie batter aside.
  3. In another mixing bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy. Incorporate the egg and vanilla extract, mixing well. Gradually stir in the flour, baking soda, and salt until combined. Carefully fold in the semi-sweet chocolate chips.
  4. Using a large spoon, drop alternate scoops of the brownie batter and cookie dough into the prepared pan in a checkerboard pattern.
  5. Place the baking pan into the preheated oven and bake for 22-28 minutes, or until the top appears set and a toothpick inserted comes out with moist crumbs. Sprinkle with flaky sea salt immediately after removing from the oven.
  6. Allow the brookies to cool completely in the pan before lifting them out using the parchment paper. Slice them into squares.

Notes

Make-ahead: The doughs can be prepared one day in advance and stored in the fridge. Let them come to room temperature before baking.
