Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/4 cup sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 cup canned pumpkin puree
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together flour, baking powder, salt, pumpkin pie spice, and sugar.
- Add the cold butter and mix until the mixture resembles coarse crumbs.
- In another bowl, combine pumpkin puree, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Turn the dough onto a floured surface and knead gently.
- Roll out the dough to about 1/2 inch thick and cut into bite-sized pieces.
- Place the biscuit bites on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Let cool before serving.
Notes
- For a sweeter treat, drizzle with icing after baking.
- Store leftovers in an airtight container for up to 3 days.
- These can be frozen for up to a month.
