Ingredients

  • 1/4 cup sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup canned pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together flour, baking powder, salt, pumpkin pie spice, and sugar.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. In another bowl, combine pumpkin puree, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Turn the dough onto a floured surface and knead gently.
  7. Roll out the dough to about 1/2 inch thick and cut into bite-sized pieces.
  8. Place the biscuit bites on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes or until golden brown.
  10. Let cool before serving.
