- 4 slices of bread
- 1/2 cup pumpkin puree
- 1/4 cup cream cheese, softened
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 2 eggs
- 1 tablespoon butter
- Maple syrup for serving
Instructions
- In a bowl, mix together pumpkin puree, cream cheese, milk, vanilla extract, and pumpkin pie spice until smooth.
- Flatten each slice of bread with a rolling pin.
- Spread the pumpkin mixture on each slice of bread and roll them up tightly.
- In a separate bowl, whisk together eggs and a splash of milk.
- Heat butter in a skillet over medium heat.
- Dip each roll-up in the egg mixture, then place in the skillet.
- Cook until golden brown on all sides, about 2-3 minutes per side.
- Serve warm with maple syrup.
Notes
- For a sweeter filling, add a bit of sugar to the pumpkin mixture.
