Ingredients

  • 1 cup sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. If using, fold in the chopped nuts.
  6. Pour the batter into a greased loaf pan or muffin tins.
  7. Bake for 60-70 minutes for bread or 20-25 minutes for muffins, or until a toothpick inserted in the center comes out clean.
  8. Let cool before slicing or serving.
